Bikini Recipe

Makes enough for 10 servings

For the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Combine all the items into a pan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, remove from the stove allowing it to cool completely. Transfer to a sealable bottle, close it keeping it in the refrigerator, where it will keep for up to one month.

For the Batch Mix: Pour all the spirits and syrup into a large bottle, let it rest for one hour, then pass it through preferably using muslin, so it's perfectly clear.

To serve: Add 85ml of your premix into your cocktail shaker packed with ice, and stir gently for one minute until cold. Filter to a frosted cocktail glass or a similar vessel, top with some cranberries adding the final touch by giving it a quick spritz of mandarin oil over the top.
